The difference is in the mindset. A good author writing about anthromorphs will take the time to make them have unique ways of acting in situations, a rich history and usually avoids generic cliches of the furry fandom.
A furry author will more or less just regurgitate the normal actions of the fandom either through assumed fursona or RP session like writing. There is no thought put into it and it's usually just mindless yiffing, scritching, etc etc.
